Really, really simple and easy healthy tasty soup.

Ingredients:

couple of carrots
a parsnip
milk
Half a vegetable stock cube
Table spoon of sugar (optional)
chilli flakes (optional)
water.
NO salt needed as stock cubes adds enough)

Sorry no measurements as I just wing it.

Method

Peel carrots and parsnip and chop into small pieces (cooks quicker)
Place parsnip into small pot and just cover with milk (add sugar if wanted). Bring to to the boil and simmer until parsnip is soft and breaks easily with a fork.
Boil carrots (with added chilli flakes if required) until soft.
Pour parsnip mix into a blender and blend to a puree, add a little water if too thick.
Drain carrots and add half a vegetable stock cube to the drained water in a large mug or small pot until dissolved.
Add carrots to the blender and blend. The mix will probably be too thick to blend properly so add the stack mix a little at a time until the desired consistency is reached.
Either serve straight away or pour into pot and heat later.

Simple healthy tasty soup which if you bump the quantities up can be kept frozen.

Really unhealthy roast Sunday dinner.
Joint - topside. Cooking time depends on weight but I always do it a bit longer as I like it 'well done'.
For roast potato's use baking potato's. Medium size, peel, cut in half and put in with the joint.
Veg - Cauliflower or/and Broccoli, and Sprouts.
Yorkshire puds - Aunt Bessies (large)
Bisto gravy powder - gravy must be thick.
Bottle of Crozet Hermitage.

It may knock a few years off your life but is worth it.
