I usually tweak the recipe too much, but today, I stuck to it, minute by minute. The internal temp didn't even reach the minimum on probe, never mind medium cooked.

I give up. 46 years and cant get it right. Edible - yes, but right - NO!
KK - I agrea you about cooking beef. I was told that you need a decent-sized piece in order for it to work well, so Mrs MW & I don't buy it for just the two of us and stick to lamb and pork - so much more consistent, enjoyable results. The only exception is 'bavette', which I believe is flank steak, which is superb for stroganoff etc but not a candidate for a Sunday roast.
Her indoors is a vegetarian so I have a similar problem. I buy a piece of beef for two. I cook it and have half as my Sunday lunch. The other half, I put in the fridge and during the week I slice it up and put it in the pressure cooker in an oxo gravy with spuds and veg. Really tasty. Piece of beef for two should cook OK. I prefer mine 'well done' which helps for cooking. If you like it slightly pink then I agree it is more difficult to get right for that size.

Wife and kids are away for 2 nights... Dinner will slowly develop around a few cans of strong cider  :D

Did just this only in a slow cooker so will see how it turns out tonight.
Always remember my mums pressure cooker. Insides where dinged and scraped like it had been sand blasted but boy did the contents come out delicious.

Out for a pub meal tonight, first time in ages & ages having perused the menu online I’ve decided I’m going to have gammon steak, duck egg ( a new tasting experience) triple fried chips, pineapple salsa & rosemary roasted tomatoes. Well that’s the plan I’ll probably change my mind when we get there :D

Treated us yesterday & we’re having a rack of lamb tonight, roast potatoes, swede, peas, cauliflower cheese, gravy & mint sauce. Also bought a couple of sticky toffee puddings which we will have with custard.
